I found this on Pinterest. This wasn’t a recipe or website but a picture taken with a phone that was then described. This gal is exactly my type of cook! She didn’t have any other information in her profile.

The recipe was only Chicken. I added some orphaned mushrooms I had in my crisper. I’d overbought on another sale.

If you’d like to make it a complete “one-dish meal,” I suggest adding some whole, fresh, or frozen green beans. Green beans get a wonderful flavor from the chicken topping: brown sugar and a dry Italian dressing mix.

It still amazes me that simple ingredients can create the most delicious meals. This is yet another of those meals. We all have brown sugar in our cupboards, and I bet most of us also have an Italian dressing mix.

This can be done with either breasts or thighs. Both will work. I used thighs. My thighs had some bone, but I removed the skin. Boneless, skinless thighs can be expensive unless they’re on sale. The regular thighs were on sale at my store for 88 cents a pound; those are the ones in the photos. I could have done it myself, but I need to be more active! This juice is delicious- not greasy or fatty, because the skin of the Chicken and the majority of its fat have been removed. This sauce is great for dipping!

I suggest you use a more robust Italian dressing if you prefer a zestier flavor. Many “zesty” and even garlic lovers can find a variety. These would be perfect for this recipe. Then I will try ranch dressing mix, but first, I will mix some with brown sugar to see how that tastes. If the dry seasoning/sugar tastes good, the Chicken will too.

Ingredients

3-4 lbs skinless, boneless chicken breasts OR thighs

Half a cup of brown sugar

Dry Italian salad dressing in one envelope

Instructions

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine brown sugar with salad dressing mix.
  • Sprinkle sugar on the Chicken and dredge it well.
  • Place the mixture in a baking dish measuring 13 x 9.
  • Spread any remaining sugar mixture on the Chicken.
  • Bake for 45-60 min; occasionally baste with juices that form in the pan.
