Garlic is the king of the seasoning world and perfect for adding deep flavor to your dishes. One trick for peeling garlic is to cut the end of the clove and then mash it slightly with the broad side of your chef's knife so the skin easily comes off. Alternatively, if you're peeling a lot of garlic you can place the cloves in boiling water for 10-20 seconds and then put them in an ice bath (known as shocking) so the skins come right off with a squeeze of your fingertip and thumb.
